You can use any part of the salmon. Do not cut the eggplants into too thick slices so that they bake together with the fish. If desired, both salmon and sliced ​​eggplant can be marinated in soy sauce, lemon juice and other marinades.

Prepare the following ingredients. Remove scales from the fish, rinse and dry with paper towels. Rinse the eggplants in water.

Cut the tails off the vegetables and cut them into half rings. Spray a baking dish with vegetable oil and place the sliced ​​eggplant in it. Sprinkle with seasoning.

Rub the salmon on both sides with seasoning. You can use other herbs and spices to taste.

Place the fish on the sliced ​​eggplant and place in the oven on a medium rack at 180 degrees. Bake for about 15-20 minutes until the fish is cooked through.

During baking, sprinkle the dish with vegetable oil a couple more times; eggplants absorb it very much.

Place the baked salmon and eggplant on a plate and garnish with fresh herbs. Serve hot with various sauces.
