Prepare all ingredients.

Wash cucumbers and soak in water for 1 hour, so they will remain crispy in caviar.

Then cut the cucumbers into small cubes.

Tomatoes, onions and bell peppers also cut into cubes. Grate carrots. Chop the garlic.

Heat vegetable oil in a heavy bottomed saucepan. Add carrots and onions. Fry until transparent.

Add cucumbers, tomatoes, bell peppers and garlic. Add salt, bay leaf and ground black pepper. Simmer vegetables for about 35-40 minutes over low heat. Stir occasionally.

At the end, pour in the vinegar. Cook for 5 more minutes.

Transfer the caviar to a clean, sterilized jar. Cover with a lid. Sterilize in boiling water for 15 minutes.

Screw on the lid tightly, turn the jar upside down and wrap it in a towel. Leave it like this until completely cooled.
