Since next year will be the year of the Green Dragon, such a dish will look symbolic on the festive table! And as you know, in Chinese fairy tales there are also water dragons, so a cold dish in the shape of a dragon will become very popular!

Prepare the following ingredients. Peel the potatoes and rinse in water. Instead of smoked mackerel, it is permissible to purchase salted herring or mackerel, sprats, etc.

Cut the potatoes into small slices and pour the slices into a cauldron or saucepan. Pour hot water to cover the slices and boil for about 20-25 minutes until tender. Drain the liquid into a cup, and mash the potatoes with butter, gradually adding the broth. Refrigerate 40 minutes. Remember that the puree should be thick!

Wash the spinach and place it in a ladle or cauldron. Add a little water and simmer for 5-7 minutes until soft. Drain the liquid.

Peel the smoked mackerel from the skin, bones, and backbone, placing the pulp in a container with boiled spinach. Puree everything together. If necessary, add a little filtered water if the mixture is too thick.

Pour the aromatic mixture into the mashed potatoes and mix thoroughly.

Shape it into a silhouette of a water dragon on a plate. You can take a wide rectangular dish, then there will be more room for your culinary imagination! Smooth the tail and sides using a shallow fork.

Cut salted or pickled cucumbers into thin slices and form the scales of the dragon, not forgetting its fins on the back.

Decorate the dish by making eyes from olives, a tongue from a slice of tomato or bell pepper, and a mustache from sliced ​​cucumber or zucchini. Place the appetizer in the refrigerator for at least 1 hour and then serve chilled. Happy New Year to you!
