Cold noodles with soy milk “Gongguksu”

Below I will tell you in more detail how to prepare cold noodles with soy milk “Kongguksu”. Cashews can be replaced with peanuts or pine nuts. If you want to reduce the cooking time, then take ready-made soy milk, but the composition should not contain sugar or flavorings. As a vegetable, you can also add soy sprouts to the noodles.
Prepare all ingredients.
Pre-soak the soybeans in water overnight.
Then drain the water, rinse the soybeans and fill with clean water. Bring to a boil, add salt and simmer over low heat for about 1 hour.
Add nuts and blend soy with nuts and water.
Strain the resulting liquid through a fine sieve or cheesecloth. Cool the soy milk and refrigerate it.
Boil noodles according to instructions. Then rinse in cold water and drain on a sieve.
Finely chop the cucumber, cut the tomato into slices or quarters.
Place noodles in a bowl, pour in soy milk. Top with vegetables and toasted sesame seeds. You can also add a couple of ice cubes.
