Dragon Cake for New Year
Description of preparation:
Cold fairy cake “Dragon” contains soft airy sponge cakes covered with butter cream and delicious strawberry filling. No one can refuse a piece of New Year’s cake! The dessert is prepared quickly and easily, the main thing is to make a couple of preparations in advance.
Prepare the following ingredients. Defrost strawberries or other berries of your choice in advance. The wings for the dragon need to be laid out in advance, maybe in the evening, so that they dry by morning.
First of all, prepare the wings for the dragon. There don’t have to be 2 of them, you can create 4-6 pieces. Dilute a little green dye in water and cut each circle of rice paper in half. Prepare two skewers. Dip half of the rice paper into the green water.
Twist the end of the paper onto a wooden skewer and place the wing on a silicone mat, folding it in waves. Let dry for at least 3-4 hours in a warm place. You can use a hairdryer and gently dry the workpiece.
Place strawberries in a ladle or cauldron and add 70 grams of granulated sugar. Boil for about 5-8 minutes until the berries are soft and you get a berry puree. Stir in the starch and gelatin and immediately turn off the heat. Leave for 5 minutes and stir again to dissolve the gelatin. Place the container in the cold for at least 1-1.5 hours.
Beat 3 chicken eggs into the container of a food processor, add 150 grams of granulated sugar and a pinch of salt. Beat at high speed for about 3-4 minutes until fluffy. If you have a wide shape, then it is better to use 4 chicken eggs and the same amount of bulk ingredients.
Pour wheat flour into the beaten egg mass and mix it in with leisurely movements, trying not to release any air bubbles. Grease the mold with vegetable or butter.
Place biscuit dough into it. Place in an oven preheated to 180 degrees for 25-30 minutes. Check the readiness of the sponge cake with a wooden skewer; it should come out dry from the middle of the cake. Remove the mold and turn it on its side. Let the biscuit cool for at least 1.5-2 hours. By the way, baking can be prepared in advance, in the evening or in the morning.
When all the ingredients have cooled, place the butter in the bowl of a food processor or mixer and add the powdered sugar. Beat for about 3-5 minutes.
Add mascarpone in parts and beat for another 3-5 minutes.
You will end up with a thick buttercream. If desired, you can add various flavors to it.
Cut the biscuits in half horizontally. You will need three cake layers. The bottom one will be wide, the top one will be narrower. Divide the cream into 4 parts. Place one part on the bottom cake layer and spread it. If desired, the cakes can be soaked in syrup if you like juicy desserts.
Cover with the second cake layer and place the second part of the cream along its edge. Place the strawberry mixture in the middle; it will already be thick.
Place the third cake on top and coat the cake with a third of the cream on all sides. If there is not enough, then take a little of the remaining cream. In this form, place the cake in the refrigerator to stabilize for 1-2 hours.
At this time, heat the vegetable oil until almost boiling. Separate the wings from the silicone mat and place in the oil. They will immediately become airy. Fry for a minute on each side and place on a paper towel. It will absorb excess oil.
Divide the remaining cream into two parts and mix black dye into one and green dye into the second. Using a toothpick, draw the outline of a dragon on the cream and outline it with black cream. Then paint with green cream and insert the wings on the side. Dragon cake for the New Year is ready! Serve it chilled. Happy New Year to you!
