How to make prunes at home

Take 3 kg of plums. We wash them thoroughly and dry them. Carefully remove the seeds. Pour sugar into the middle of each fruit (you will need 1 kg of product in total). Place the plums in a saucepan with a thick bottom. Each layer of fruit sprinkle with sugar. Place the pan on the stove. Set the heat to medium. Bring the contents of the pan to a boil. Mix the plums very carefully. Let them boil again, but do not cook the fruit.

After the plums change color, turn off the heat. Leave them in the pan until they cool completely. Then, using a colander or sieve, get rid of the syrup. Place the plums on a natural cloth to dry completely. Then we cover the baking sheet with baking paper. Place the fruit on it in one layer. Place them in an oven preheated to 50 degrees. for 6 hours. Leave its door slightly open. Ready!

Wash the plums thoroughly. Boil 1 liter of water in a large saucepan. Add to it 1 tsp. soda. Place plums in boiling liquid. Keep them in the solution for 20 seconds. They should be completely covered with liquid. Then we take the fruits with cracked skins out of the water. We wash them under running water. Dry thoroughly using paper towels.

Lay out the prepared plums in one layer into an electric dryer. First set the temperature to 45 degrees. Dry the plums for 3.5 hours. We take them out and let them cool completely. Then increase the temperature to 60 degrees. Keep the fruit in the dryer for another 6 hours. We take them out and cool them. Then set the temperature to 80 degrees. Dry the plums for 6 hours. Cool the finished dried fruits.

Wash the plums thoroughly under running water. Blanch them for half a minute to rid their surface of the waxy layer. This will allow the liquid to evaporate faster. Dry the fruit with paper towels. Place the plums on the grates in a single layer. We leave them in the sun. They must dry from morning to evening. At night we take the plums indoors. Drying fruits within 5 days. Then they need to be dried in the shade for another 4 days.

The best way to store homemade prunes is in glass or ceramic containersthat close tightly. Before doing this, they need to be washed thoroughly, doused with boiling water and dried thoroughly. Such containers filled with prunes should be kept in a cool place. Do not allow moisture to appear in jars of dried fruits, otherwise they will not be able to stand for 6 months.
