Then put the carrots in a clean dry jar, designed for 2 or 3 liters. We place the vegetable in the container upside down, then vice versa. So it will be possible to fit the largest possible number of fruits in the jar. Then, without closing the container with a lid, turn it upside down. We send a jar of carrots to the cellar, where they will be perfectly stored for almost a whole year, while remaining fresh and crispy.

Pickled carrots without vinegar

You can also close this delicious vegetable for the winter. in spicy marinade. Due to the fact that you do not need to use vinegar in the recipe, the carrots will retain their taste. Therefore, it can be safely added to salads, and eaten as an independent dish (spicy and fragrant).

Required Ingredients:

  • 2 kg carrots
  • 5 tooth garlic
  • 1.5 liters of water
  • 80 g sugar
  • 50 g salt
  • 6 g citric acid
  • 3 bay leaves
  • 4 cloves
  • 8 black peppercorns
  • 2 tsp mustard seeds

Cooking method:

  1. We peel the carrots. Cut it lengthwise into medium pieces (not too thin). We clean the garlic. Cut it into slices.
  2. Pour water into the saucepan. Pour sugar, salt and citric acid into it. Add bay leaf, cloves and black pepper. Bring the contents of the saucepan to a boil. Boil everything for 5 minutes.
  3. Put the carrots in a saucepan with marinade. Cook everything on low heat for another 5 minutes. Then we lay out the carrots in sterilized jars.
  4. Add garlic and mustard seeds to it. Pour hot marinade over carrots. Close the jars tightly with lids. Turn them upside down and wrap them in a blanket. Leave until completely cool.
