Indian style pickled cucumbers

Below I will tell you in more detail how to cook cucumbers in Indian style. For vegetables, you can also add a stalk of celery, and for greens, add cherry and currant leaves for flavor. White wine vinegar can be replaced with apple cider vinegar. The taste of cucumbers is piquant, slightly sweet and goes very well with other vegetables.
Prepare all ingredients.
Pre-soak the cucumbers in cold water.
Cut the bell pepper into medium-sized slices, the red onion into thick feathers, and the cucumbers into cubes. Peel the garlic and cut in half.
For the marinade, boil water with vinegar, bay leaf, cloves, sugar, salt and peppercorns.
Add the vegetables and blanch them for 2 minutes.
Remove the vegetables with a slotted spoon and transfer to a clean, sterilized jar. Add coarsely chopped parsley.
Bring the marinade to a boil again and pour into the jar. Cover tightly with a lid. Cool at room temperature and then refrigerate for 1 week.
