Prepare all ingredients. It is advisable to use mackerel that is slightly frozen so that it can be cut more easily.
Rinse the mackerel under running water, cut off the head, tail and cut off the fins. Then cut lengthwise from the back (that is, we cut not as usual from the abdomen, but from the back). Remove the entrails and the main bone, also removing all large and, if possible, small bones. For the marinade, combine soy sauce, oil, salt, sugar and lemon juice. You can add a mixture of peppers and ground paprika.
Grease a heatproof dish with oil. Place the fillet skin side up.
Unfold the fillet pieces vertically, placing them on edge.
Pour over the prepared marinade and bake in the oven at 180 degrees for about 20 minutes.
