Mushroom soup made from dried mushrooms with barley

Below I will tell you in more detail how to prepare mushroom soup from dried mushrooms with barley. You can use any dried mushrooms. I used white ones; boletus, shiitake or chanterelles would also be suitable.

Prepare all ingredients.

Wash the pearl barley and soak in water for 1 hour.

Do the same with dried mushrooms. Afterwards, wash and cut the mushrooms.

Place the pearl barley and mushrooms in a saucepan, add water and bring to a boil over medium heat.

Peel the potatoes and cut into medium-sized cubes, cut the carrots into cubes, and finely chop the onion.

Fry carrots and onions until golden brown.

After half an hour, add the roasted vegetables and potatoes to the pan. Salt, pepper and add bay leaf. Cook for about 25 minutes until the potatoes and pearl barley are cooked through.
