Below I will tell you in more detail how to prepare pickle soup for the winter without vinegar. Tomato paste can be replaced with chopped tomatoes, but then simmer the vegetables longer and do not add water. The taste of this pickle is rich and especially aromatic. Take note!

Prepare all ingredients.

Pre-soak pearl barley in water for 2-3 hours. Then rinse and place on a sieve. Then boil the pearl barley until half cooked.

Cut the onion into cubes, and grate the carrots and pickled cucumber.

Heat vegetable oil in a heavy-bottomed saucepan over medium heat. Fry onions and carrots until golden brown.

Add tomato paste and pickles. Stir and simmer covered for another 5 minutes.

Add pearl barley.

Pour in hot water so that it covers the entire mass. Salt and pepper to taste. Simmer over low heat for 7-10 minutes.

Place the hot pickle mixture in clean, sterilized jars.

Screw the lids on tightly, turn the jars upside down, wrap them in a towel and leave until completely cool.
