Squash caviar with beets

This caviar is prepared very simply and quickly. Try to take beets that are dark burgundy and sweeter. It is very tasty to serve this appetizer with a slice of fresh bread, croutons or toast.
Prepare the ingredients for making squash caviar with beets.
Peel, wash and finely chop the onions. Place in a frying pan with sunflower oil.
Fry the onion until transparent.
Peel the beets and zucchini, wash, grate and place in a frying pan with onions.
Add salt to taste. Cover the pan with a lid and simmer the vegetables over medium heat until soft. Then add tomato paste and stir the caviar.
Simmer for another 5 minutes and turn off. Add chopped garlic to the prepared caviar and stir.
Squash caviar with beets is ready. Serve as a snack.
