Drachena is a dish of Russian cuisine, very simple and tasty. You can add the remaining porridge to the egg mixture; it is especially good with millet porridge. The best flavor is fresh from the oven, but it’s just as good when it’s cooled.
Prepare all the necessary ingredients for preparing Old Russian drachena.
Separate the eggs into whites and yolks. Place the yolks in a bowl, pour in the milk, add sour cream and flour, and add salt. Mix everything well until smooth.
Add a pinch of salt to the whites and beat into a fluffy, stable foam. Place the whipped whites into the yolk mixture. Mix everything carefully from top to bottom.
Grease a tall baking dish with butter and pour in the egg mixture.
Place the pan with the drachena in a hot oven and bake at 180 degrees for 35-45 minutes, until cooked.
Remove the finished drachen from the oven, pour melted butter over it and serve immediately.
