Summer season is open! Cooking salads from the first greens and grilled dishes
The first warm days beckon summer residents to their plots. Ahead are months of hard work and the expectation of gratitude in the form of a harvest. But the summer menu is also worth considering, because summer is a great time for fresh salads and grilled dishes. And we’re excited to share the options!
After a few sunny weeks, juicy greenery will appear on the beds. And this means that you can arrange a kind of celebration of the “first bunch of greenery.” Cut lettuce, spinach, dill, parsley, add a few cucumbers and season everything with sour cream, season with salt, pepper and garlic – and you get a surprisingly healthy and tasty Young Green salad.
You can make a cool nettle salad while it’s still young and juicy. Be sure to pour boiling water over it and dry it. Add all the greens that are on hand, as well as a couple of boiled eggs. Season with sour cream, salt and pepper.
Dill, parsley, onions, and other herbs can make a great spread base for sandwiches. Add cottage cheese and a little sour cream, beat until smooth, season and a healthy snack is ready.
Spring salad with radish, cucumber, herbs is a storehouse of vitamins. You can fill it with vegetable oil, sprinkle with vinegar or lemon juice.
The summer season begins, quick meals for busy gardeners are more relevant than ever. Catch some easy snack ideas that you can whip up.
- grilled vegetables (zucchini, bell peppers or mushrooms) – just marinate, put on a wire rack and brown.
- snacks in pita bread (vegetables, cheese, meat) – choose your favorite toppings, wrap in pita bread and fry in a pan or grill.
- sandwiches are a great alternative to lavash dishes. They can be prepared with any filling and browned on a wire rack until a delicious crust.

Paste of garlic arrows
For a snack, you can make a simple sandwich spread if you have a blender on hand.
- Garlic arrows – 100 grams;
- Butter – 100 grams;
- Salt, sugar and lemon juice – to taste.
Wash the arrows, dry, cut off the ends. Put in a blender bowl and grind a little. Add salt, some sugar and lemon juice. Put the soft butter and beat everything until a homogeneous paste is formed. Everything, the snack is ready!
Rack of pork ribs
Incredibly juicy and savory, ribs make a great alternative to barbecue, especially when cooked American-style.
- Pork ribs – 1 kg.;
- Ketchup – 100 grams;
- Brown sugar – 2 tbsp. l.;
- Apple cider vinegar – 2 tbsp. l.;
- Garlic – 3-4 cloves;
- Apple juice – 100 grams;
- Bulb – 1 pc.;
- Salt, pepper, chili, coriander – to taste.
Peel and finely chop the onion, chop the garlic. Combine all ingredients in a deep bowl. Lay out the washed ribs and leave to marinate overnight. After laying the ribs on the foil, wrap tightly and send to the grill. Roast for about 50 minutes, turning every 10 minutes. Remove from heat, carefully remove foil and place ribs on a wire rack. Brush with remaining marinade and brown until crispy.
Fish is a great alternative to meat. The pike turns out to be very tender, and the light marinade does not interrupt the taste of the fish, but only complements it.
- Pike – 4 steaks;
- Vegetable oil – 20 grams;
- Lemon – 1/3 pc.;
- Salt, pepper and herbs – to taste.
Wash the fish, dry it and put it in a deep bowl. Add oil, lemon juice, salt and pepper to taste, and some chopped herbs. Stir and leave for half an hour. Then put on the grill and fry on the grill until golden brown and cooked.
If you think that pizza cannot be a recipe for a summer residence, then you are mistaken. You can cook it easily and simply, and absolutely anyone can fill it.
- Dough or pizza base – 300 grams;
- Sausage – 100 grams;
- Mushrooms – 100 grams;
- Tomato – 1 pc.;
- Cheese – 100 grams;
- Tomato sauce – 3-4 tbsp. l.;
- Spices – to taste.
Roll out the dough and place in a pizza dish or pan. Lubricate with sauce, sprinkle with spices. Put sausage, mushrooms and tomatoes cut into thin slices. Sprinkle with grated cheese. Place on a wire rack and brown. If the bottom is browning faster than the cheese melts, cover the pizza with foil for a couple of minutes.
