Vinaigrette with fresh cabbage and cucumber
Preparation description:
Beets and other vegetables are dressed with vegetable oil so that the vegetables do not stain too much with beet juice. With this dressing, the vinaigrette will always glow, as if it had just been poured with oil. If desired, you can add canned peas to it, mustard or horseradish for spiciness.
Prepare all the necessary ingredients for making a vinaigrette with fresh cabbage and cucumber. Peel the cabbage from the upper leaves, wash the vegetables and let them dry.
Chop the cabbage into thin strips and place in a bowl. Salt the cabbage, add sugar and lemon juice. Remember cabbage with your hands.
Cut the boiled carrot into small cubes and add to the cabbage.
Cut boiled potatoes into cubes like carrots and add to vegetables.
Cut off the tips of a fresh cucumber, cut it into strips and add to the bowl.
Pour 2/3 vegetable oil into a bowl and stir.
Finely chop the greens and add to the vinaigrette, mix.
Peel the boiled beets and cut into cubes like carrots and potatoes. Mix the beets with the remaining vegetable oil in another bowl.
Combine the beets with the rest of the vegetables, bring to taste with salt, sugar and serve.
